Gringo's Mexican Restaurant is a local Mexican restaurant located in Rexburg, Idaho. I was looking for dinner before heading out to a movie, and this restaurant was conveniently located across the street from the Paramount 5 theater. The food and colorful ambiance was decent enough to warrant another visit.
Gringo's features a big menu of all your favorite Mexican foods, from enchiladas, to burritos, to chimichangas. There are plenty of options to suit every diet with chicken, beef, and veggie options in every category. I ordered the veggie burrito and while the portion was gigantic, the flavor was just okay. It was a bit on the bland side. On the other hand, Mike ordered the chicken burrito and really enjoyed his dinner. The chips and salsa were great: you got 2 several different varieties of salsa ranging from mild to super hot.
The waiter was sociable and friendly and definitely one of the nicest we encountered in the area.
Even though the food wasn't the best Mexican I have ever tasted, the atmosphere was fantastic. The decor including the colorful paintings on the wall and the old stone architecture was appealing.
Gringo's, although not the best Mexican restaurant around, is the best you are going to find in Rexburg. For being such a small town it really isn't that bad of a restaurant. I recommend seeing a movie, followed by a fun dinner date at Gringo's.
